Combine all queso ingredients in a large microwave safe bowl and microwave until cheese is hot and melted, stirring occasionally.
Heat olive oil in a skillet over high heat and sauté peppers and onions until soft and slightly browned on the edges.
Divide Brisket among 4 toasted rolls and top with queso, sautéed peppers, and onions.
