Preparation
-
Step 1
Preheat the grill to MEDIUM-HIGH heat, about 400℉. Place the chiles directly on the grates and roast them, turning occasionally, until the skin is blackened all over, about 10 minutes. Once charred, remove the chiles and place them in a bowl. Cover and set aside, allowing the chiles to steam. Once the chiles have cooled, easily peel off and discard skins. Dice roasted chiles.
-
Step 2
Combine Ground Beef, half of the diced chiles (about 4 oz), salt, shredded cheese, and Worcestershire sauce in a medium bowl, mixing lightly but thoroughly. Shape into twelve ½-inch thick mini patties.
-
Step 3
Place patties on grill and cook 9-11 minutes or until instant-read thermometer inserted horizontally into center registers 160°F, turning occasionally. Add ¼ slice of pepper jack cheese to each patty and allow to melt.
Cooking Tip: Cooking Tip: Ground beef should be cooked to an internal temperature of 160°F. Color is not a reliable indicator of ground beef doneness.
-
Step 4
Add one slider patty to the bottom bun. Top with remaining green chiles, lettuce, tomato, and onion. Close slider with top bun.

The Essential Ingredients
Ground Beef: Also called ‘hamburger,’ is made by grinding beef cuts and beef trim. It works well in dishes that require crumbles, and typically any leanness of Ground Beef works well in dishes – just be sure to drain any remaining fat after cooking.
Green Chiles: These mildly spicy peppers, like Poblano, Hatch, or Serrano, are harvested while green and commonly used in Southwestern and Mexican cuisines.
Pepper Jack Cheese: A semi-soft cheese infused with peppers and spices.
Worcestershire Sauce: This bold and tangy sauce (and condiment) is a blend of vinegar, anchovies, molasses, and spices. It’s packed with umami flavor and used to flavor many dishes.

Frequently Asked Questions
-
What's a common mistake when making sliders?
Overhandling the Ground Beef mixture is a common mistake. Mixing too aggressively or pressing the patties too firmly can result in dense sliders. Lightly combining the ingredients and gently shaping the patties helps keep them tender and juicy.
-
Why are Hatch green chiles roasted before using them?
Roasting blackens the skin and brings out the chiles’ smoky, slightly sweet flavor. After steaming, the skins peel away easily, resulting in tender chiles that add depth and complexity to the sliders.
-
How spicy are Hatch green chiles?
Hatch green chiles range from mild to hot depending on the variety. Mild Hatch chiles offer a smoky, earthy flavor with minimal heat, while medium and hot varieties provide a more pronounced kick. Their versatility allows you to customize the spice level to suit your preference.
