Step 1
Preheat gas or charcoal grill to 400°F. Shape Ground Beef into four ¾-inch thick patties. Fold cheese slices into quarters and place in the center of one of the patties, then top with another patty and use fingers to seal Ground Beef around cheese. Repeat this step with the second cheese slice and the remaining two patties. Season each side with salt and pepper. Make a small indention in the center of the burger with your thumb.
Note: The fire should be quite hot; you should barely be able to hold your hand 3 or 4 inches over the grates. After the coals are gray, spray grates with cooking spray or brush with oil to help keep burgers from sticking. -
Step 2
Place burgers on grill and cook about 6-7 minutes per side until the internal temperature reaches 160°F.

Place burgers in buns and add desired toppings.
