Cashew Coating for Beef Satay
While inspired by satay, a traditional skewered meat dish from Southeast Asia that typically features chicken with a peanut dipping sauce, my uniquely delicious version is all about beef and sweet heat barbeque flavors. This is Texas, y’all!

There are several factors that keep this easy weekend (or busy weeknight) recipe a quick fix. First, I’ve used top sirloin steak, while this cut is very lean, it’s also surprisingly tender. The benefit to you (aside from the great nutrition) is that there is no marinating time required — just pull it straight out of the fridge and get started. Second, because the beef is sliced into thin ribbons, flames flickering up from the grill kiss it to meaty, mouth-watering perfection in mere minutes. In fact, it’s best to pull it off the grill sooner than later to keep in from getting over done (meat will keep “cooking” on serving platter while it rests). Third, the Spicy Mango BBQ Sauce is whipped up with off-the-shelf, store-bought products including BBQ sauce and jam — no shame in this semi-homemade game!
