Summer time and the living is…salad. Okay, not entirely, but for many of us, this time of year means searching for lighter, fresher seasonal meals to serve our family and friends as we gear up for travel and vacation. Now, before you groan at the mention of salad, read on. This Beef, Mango and Avocado Salad recipe is both sweet and savory, creating great flavor that taste buds of all kinds will love. We should add that this is an extremely easy recipe! You’ll have a nutritious and filling dinner on the table in less than an hour – who doesn’t love that?
First up, marinate the Top Sirloin Steak with lime vinaigrette in the fridge. In the interest of time, we marinated it for about 45 minutes, but you can let it sit for up to two hours if you choose. Important note: be sure to save some marinade to use as dressing later on!
Once marinated, it’s time to get grilling (be sure to consult our tips (marinating tips link) beforehand!). We used a gas grill at medium heat, leaving it on for about 14 minutes and turning occasionally. Carve the steak into slices when done.
Next, cut up the mango and avocado (the recipe calls for one mango and one avocado, but we actually recommend using two of each for added flavor and texture), slice the red onion into rings and add these to a bed of greens along with the steak. Crumble queso fresco cheese and drizzle the additional lime vinaigrette marinade on top for the finishing touches!
